Standard T-568B Ethernet Wiring
It is best to stick to some wiring standard.
Here is the standard T-568B wiring as from 2002 where you start with Orange.
Oddly numbered wires are with white stripes.
Green is split across the blue.
You end with Brown. The plugs are identical for straight through cables.
For crossover, simply exchange the Orange and Green pairs on one of the adapters.

Preparing the Cable to Carry Power
Make use of the blue pair (middle pins 4 and 5) and the brown pair (rightmost pins 7 and 8) to carry the power.
The coloured wire with its white pairing wire can be joined together as to carry more current and have less voltage drop on long runs.
The PoE B standard uses the blue as positive and the brown as negative thus it makes sense to do the same.

Wiring the Standard non-PoE Equipment on Receiving End
Use the plug from the device's PSU and attach it to the blue and brown pairs for positive and negative respectively.
The device's PSU where the plug was removed from can then be wired to the "injector" end of the cable also following blue for positive and brown for negative.
